Both SUGAR and JAGGERY are made up of different components and produced differently. These are produced all over the world and consumed at a higher rate as well.
JAGGERY: jaggery is made by dehydrating cane juice and is then solidified.
SUGAR: sugar is made by refining brown sugar by sugar beet.

POSITIVE HEALTH EFFECTS
JAGGERY: it shows several positive health effects and those are increases immunity, maintains blood pressure, helps in detoxification, and can be used as a natural dye.
Daily consumption of JAGGERY helps in increasing the immunity and also helps in fighting against allergic reactions. It maintains the blood pressure to normal as both high and low is dangerous. SUGAR: here SUGAR’s part is heavier than JAGGERY. There are several negative health effects caused by sugar. Some of the known effects are diabetes, obesity, cardiovascular diseases, tooth decay, Alzheimer’s diseases, and dementia.

TYPES:
Both JAGGERY and SUGAR got their types. There are three types of sugars and three types of jaggery. Starting first with jaggery.
JAGGERY: it is mainly of three types and those are cane jaggery, date palm jaggery, and coconut jaggery.
Cane jaggery is one of the most common forms of jaggery produced worldwide. Some other forms include date palm jaggery and coconut jaggery. Date palm jaggery is produced in West Bengal and Southern parts of India and other countries like Pakistan and Nepal. Whereas coconut jaggery is famous in Thailand.
SUGAR: it is mainly divided into three main categories and those are monosaccharides, disaccharides, and polysaccharides.
Monosaccharides:
These are the simplest form of carbohydrate and can not be broken further. These are also known as simple sugars because of the simplest form. Some of the common and well-known monosaccharides are glucose, fructose, and galactose.
Disaccharides:
Disaccharides are made by the combination of two monosaccharide units. These are soluble in water like monosaccharides. Some of the common examples of disaccharides are sucrose, lactose, and maltose. These disaccharides can be further divided into two more types and those are reducing sugars and non-reducing sugar.
Reducing sugars are those which can reduce the aldehyde present such as maltose. Non-reducing sugars are just the opposite of reducing sugars and can not reduce aldehyde group present such as sucrose.
Polysaccharides:
When a number of monosaccharides are combined together into chains they result in the formation of polysaccharides. Some of the common polysaccharides are starch, glycogen, cellulose, etc. Polysaccharides are further classified into four categories and those are structure-based polysaccharides, storage-based polysaccharides, polysaccharides having acidic nature, and polysaccharides involved in the capsule of bacteria and microorganisms.
